Tasting Notes
Explosion of red berry fruit captivates the senses. Notes of freshly pressed pomegranate, crushed young raspberry fruit and hints of graphite minerality entice. Herbal aniseed, bruised rooibos and fynbos aromatics enrich the flavour profile.
Vibrant and confident entry of young red berry fruit, edgy texture and perfectly poised structure which extends to a pleasurable, prolonged finish. Intriguing salinity due to the maritime origin.
Use of Oak
French Burgundian Oak, matured 100% in 2nd fill 300L barrels for 11 months.
Vinification
Hand harvested. 30% Whole bunch in one tonne open top fermenters, daily punch downs. Spontaneously fermented until dry. Soft press, malolactic in barrel. No rackings. Stayed on the gross leese until bottling.
